Season the beaten eggs well with salt and pepper
Heat the oil in a non-stick frying pan over a medium-low heat
Add the olives, the tomatoes and the cheese into the egg mixture
Pour the eggs into the pan and allow the mixture to swirl. Let the mixture cook for about 1-2 minutes and gently lift edges of omelette with a spatula to allow uncooked portion of eggs to flow to edges and set.
Use the spatula or a large plate to roll the omelette upside down in the pan and brown the other side as well.
Fold the one edge of the omelette over the other and slide onto plate
