Marinated Olives

The countryside of Greece during Spring and Summer is full of amazing wild aromatic herbs. The smell of oregano, thyme, lavender and rosemary awaits you as you climb up the hills. The elderly usually collect the fresh herbs and dry them at home, to be used all year round to marinate the meat, the fish, the poultry and all the vegetables. These are the same wild herbs we use to create our marinades for our olives.
